Peroni Nastro Azzurro is an Italian lager beer. Crisp and refreshing with a subtle citrus aroma, this import beer has a 5.1% alcohol by volume. Peroni Nastro Azzurro is brewed with the highest quality hops (Saaz-Saaz and Hallertau Magnum) that give the Italian beer its balanced aroma, which is light on the palate. Birra Moretti is brewed the traditional Italian way with an unchanged recipe since 1859. With a unique aroma, this bottom-fermented lager reflects the timeless Italian traditions of simple, yet exceptional ingredients. Birra Moretti has a golden straw-like color, spicy hoppy aroma and slight malty taste.

Brewed by way of single step infusion. Bottom fermenting yeast is added to induce fermentation at 10°C (48°F). When attenuation reaches 50 %, it is blended with a combination of old and young sour beer that were fermented with lactic acid bacteria, wild yeast and black sweet cherries. The fermentation continues and the natural sugars from the malt and cherries are converted to alcohol. At the end of primay fermentation, fresh beer wort and top fermenting Saccharomyces Cerevisiae yeast are added. The beer is then bottled and sent to refermentation in a cold room at around 7°C (42°F). The refermentation lasts about 4 months.

This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier. “To all those who still hold dreams and will never cease to search for the happiness they deserve”.

When Chase Healey from Prairie Artisan Ales came for a visit, we brewed this Brett Belgian Ale, paying homage to a world famous Trappist ale, to the legend of Matilda of Tuscany and the connection between Canossa and Orval Abbey, and Chase’s state of birth, Oklahoma. No further explanation needed, right? Only available on a limited number of bottles, starting in February.

A small amount of cassis is added to Cassissona at the beginning of the fermentation. It is matured for at least six months. Bottle-conditioned & unpasteurized, it is a stylish melange of 3 malts and 3 hops varieties. It has a rich, complex fruity aroma - primarily black currant - along with other intense flavors and scents of vanilla and toffee. 6.5% alcohol by volume.

Blend of Krisopolis (a new beer, that will be available in the future, fermented in barrels for 2 years, then Morello cherries are added to it), with a part of Ultima Luna (Barley Wine matured in Amarone barrels, with Marasca Morello cherries) and a part of young beer.

Shangrila was the first creation from Birrificio Troll. It is of dark amber color and has a persistent head and with its 8.5 alc./vol. it warms the palate and the heart. Shangrila is brewed using malt, English hops and a mixture of spices from the Himalayas: tandori (Blend of coriander, cumin, garlic powder, paprika, ginger, cardamom, saffron), curry, pepper, anise.
