The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these “cow hunters” used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. The mostly-extinct farmhouse breweries of Belgium were notorious for using whatever ingredients were available to them. One of treasures made by these breweries and nearly lost to history was spiced witbier (white beer). Witbier defied an untimely fate, being revived by a man named Pierre Celis who worked in one of the last breweries in Belgium to commercially produce a version of this unique, spiced beer. Celis eventually sold his own witbier brewery and moved to Austin, Texas to open another white beer brewery (Celis White) and the rest is history. ​ In honor of the late and great Pierre Celis, we are proud to offer Community Wit as a warm weather libation, produced locally for our fellow Texans once again. We brew it traditionally using unmalted wheat as our base and lightly spice the kettle with freshly ground sweet and bitter orange peel and coriander seed. The hops are minimal, keeping the focus on the wheat, spices and the unique character contributed by authentic Belgian yeast strains, one of which originated from the same strain that Pierre brought across the Atlantic to America.

Elder sister of our Fraîcheur, it is too strong to be drank during the day. hence “La Fraîcheur du Soir”, or the evening cool. A double wheat beer, brewed with about twice the amount of grain used for its little sister. It contains pilsner malt, unmalted wheat and oats grown at the foot of the Jura mountains. Cilantro, bitter orange peel, Magnum, Tettnager and Spalter Selects hops are added too. Then it is fermented with a Belgian witbier yeast, and bottle conditioned, unfiltered and unpast- eurized. By nature a full-bodied beer, with a lovely initial sweet edge, and a soft fruitiness. A sharp touch, citrus and spicy notes lead to a moderate final bitterness. La Fraîcheur du Soir will appeal to both casual drinkers looking for an easy to drink yet tasty beer and seasoned beer buffs looking for intensity and complexity

Blanche de Namur is a classic top fermented wheat beer, brewed with wheat, hops and yeast that produces that traditional cloudy appearance. Also added to this brew is orange peel, to give it a citric bitterness, and coriander for that added spicey bite. The overall effect is a very refeshing thirst quenching beer, ideal for those summer days watching sport, or even at the beach. It's a super beer with food especially poultry, cheeses or seafood, as well as most Asian food. Interestingly Du Bocq recommend this beer be tasted at much colder temperatures (2 - 4oC) than most other beers of this style.
