The coffee lover’s consummate beer. Brewed with an abundance of flaked oats, bitter and imported chocolates, and two types of coffee, this stout has an intense fresh-roasted java nose topped with a frothy, cinnamon-colored head that goes forever.

Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.

This beer taught us that patience truly is a virtue. KBS is a big imperial stout brewed with a massive amount of coffee and chocolate and then bourbon barrel-aged to perfection. Incredibly silky and full-bodied with notes of vanilla, cocoa, roasted coffee and charred oak.

YETI IMPERIAL STOUT is an onslaught of the senses. It starts with big, roasty malt flavor that gives way to rich caramel and toffee notes. YETI gets its bold hop character from an enormous quantity of American hops. It weighs in at a hefty 75 IBUs.

Kentucky Bourbon Barrel Stout is brewed and aged with Alltech Café Citadelle Haitian coffee and aged in world-famous Kentucky bourbon barrels. The result is a complex stout with dark-roasted malts, hints of caramel and vanilla and a lightly roasted coffee finish.

Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. Robust flavors of vanilla, espresso, whiskey, chocolate and roasted grain are balanced by hints of date and plum, with just enough hops to round it all out. Roughly one-third of the final blend is freshly brewed beer; the rest is aged for up to a year (or more!) in both first and second use whiskey casks.

Black House is an oatmeal coffee stout bursting with coffee aroma and flavor.

Roasty, chocolate tones swirled with oatmeal smoothness and dark as the night. The Dark Star crashes, pouring its light into ashes, so follow as the Lady of Velvet recedes in the nights of goodbye. This one is too smooth … and at 8.0% ABV, dangerous.

Dark, Rich, and Scary. Made with Highly roasted malted barley, and plenty of it, to give the beer an uncommon richness and smoky, roasty depth…sorta like a hydraulic sandwich in a glass.

This is the famous Brooklyn Black Chocolate Stout. In the 18th century, Catherine the Great, Empress of Russia, ordered a stout to be sent to her from England. This beer was brewed strong and hoppy to survive the sea voyage, and it arrived in perfect condition. Soon "Russian Imperial Stout" became the toast of the Russian aristocracy. Brewed since 1994, our Black Chocolate Stout has itself become a modern classic, heralded the world over. It achieves its dark chocolate aroma and flavor through the artful blending of six malts and three distinct mashes. Properly kept, it will improve in the bottle for many years. This stout is the toast of the winter season in many countries, and there is nothing better to enjoy with chocolate desserts, cheesecake, ice cream, fine cheeses and roaring fireplaces.

Bomb! is an imperial stout aged on espresso beans, chocolate, vanilla beans, and ancho chile peppers. All the flavors meld to create a truly unique beer. The peppers add just the right amount of heat to compliment the intense coffee and chocolate flavors.

A double dose of vanilla from fresh Bourbon barrels and whole vanilla beans from Mexico and Madagascar is complemented by essences of chocolate, caramel, and molasses to round out this luxuriously silky stout.

This titanic, immensely viscous stout is loaded with inimitable flavors of chocolate-covered caramel and coffee and hide a hefty 65 IBUs underneath the smooth blanket of malt. It is made with enormous amounts of two-row malt, chocolate malt, roasted barley, flaked oats and hops.

Imperial Stout Aged in Bourbon Barrels with Coconut and Vanilla

This is the kind of beer that gives the word "stout" a reputation. Extra generous quantities of barley malt, followed by vigorous fermentation leaves this "imperial" heavy weight with 8% alcohol A.B.V. and a body as full as chocolate bread pudding. A complimentary and complex array of bitter notes comes form potent American hops, earthy British hops, black-roasted malts and, of course, coffee. Santa Fe Brewing Company uses only top-quality ingredients like organically grown East Timor coffee beans blended with New Guinea coffee beans, locally roasted by O’hori’s Coffee House. Its heavenly flavor and aroma can’t be beat or imitated.

DON’T LET IT FOOL YOU. This is an imperial stout first and foremost. Deep dark malts lend espresso notes and British crystal malts contribute the perfect toffee and caramel flavor. A dry finish with molasses character compliments of brown cane sugar, and just enough residual sugar to finish full-bodied but never cloying. The peanut butter is simply featured to augment what is already there…a fantastic example of a legendary beer style.

Mornin’ Latte is an Imperial Coffee Milk Stout brewed with lactose and a careful blend of cacao nibs and aromatic coffee to emulate an Iced Mocha Latte. This delicious beer asks you to slow down, pour a glass and enjoy the moment.

Few times in the history of craft beer it has happened that a highly praised beer rises beyond mortal stardom into a higher godly league. Usually the recipe to make such heavenly drops is thick fudge-like body, pitch black color, amazingly overwhelming aromas of chocolate, coffee, dark fruits and muscovado sugar, obviously only made in limited amounts and most crucial of all – it must taste rare!

This is a beloved stout. When first introduced as a limited special collaboration release with San Diego homebrewer Chris Banker (after his recipe won our annual homebrew competition) and Cerveceria Insurgente, it was an instant hit and fans began clamoring for its return. Seeing as how its amazing flavor profile is evocative of Mexican hot chocolate, featuring coffee, pasilla peppers, vanilla, cinnamon, nutmeg and a generous amount of our own in-house made chocolate, we concluded it was the perfect stout to re-release in celebration of the Holidays and the entire winter season. This is now a highly anticipated yearly tradition that we are pleased to present from us to you, and makes a perfect wintry gift from you to your friends, loved ones, or simply to yourself. Cheers!

CBS was born when we stumbled upon some bourbon barrels that had previously housed maple syrup. We opted to put the same base beer as KBS, an imperialized version of Breakfast Stout, in the maple barrels and, after one taste, we knew we had something special. Rich maple syrup, roasted coffee and velvety chocolate meld together in what can only be described as a transcendental drinking experience.

Bourbon County Brand Stout aged in Rye whiskey barrels with blackberries, candied cherries, and sea salt added. This rare offering is complex, robust, and full-bodied.

Ale of the 2 Tun Imperial Stout pours out black with a thick brown colored head. The aroma is a mixture of cocoa, black coffee, roasted malts and a hint of molasses. Its flavor is a decadent balance of black coffee, bittersweet dark chocolate, roasted malts, a touch of molasses and a soft fruit character. A moderately full bodied beer with matching carbonation, this imperial stout has just enough alcohol to keep your cheeks warm, and a dry finish to keep you coming back for more.

Son of a Baptist is an 8% ABV imperial stout. It is not barrel aged like its father, Big Bad Baptist; instead its flavor profile was designed to highlight the complex and often unique flavors of small batch coffees. Instead of sourcing a coffee that would play well in a beer we sought out creative and innovative roasters, then asked them which beans they’re passionate about. Each resulting release of Son of a Baptist is widely different depending on the coffee selected. Some are fruity and sweet with notes of jam and chocolate, others are rich and earthy with a big roasted finish. Each limited release will return to the Roaster’s home market where the beer and the coffee can be sampled side by side.
