Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish. It is a balanced quality beer with a soft feel in the mouth and a long, dry aftertaste. The Dubbel contains 7% alcohol.

In November 1992 Maudite (the damned one), was the first strong beer to be distributed in Quebec grocery stores. Maudite is a mahogany-colored, rich-tasting premium beer that has a distinctive, complex taste. Because of the warmth it releases, this strong character beer must be served cool but not cold. Perfect with pasta, red meats, stews and spicy dishes, it also makes a good aperitif and after-dinner drink. Maudite has a typically Quebecois name that is reminiscent of the legend of the Chasse-Galerie (the legend of the Flying Canoe). Legend has it that a group of lumberjacks struck a deal with the devil to fly home in their canoes, guided by Satan himself, to make it home in time for Christmas.

The Chimay Red Cap, or Premiere, in 750 ml bottles, is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell. This traditional Belgian beer is best savoured at cellar temperature. ABV 7.0

Winter is Here is brewed with pilsner malt, white wheat malt, and soft red wheat flakes, hopped with Saaz hops, and spiced with white pepper, sea salt, coriander and sweet orange peel. Brewery Ommegang’s house yeast is used in primary and secondary fermentation. This double white ale pours a hazy pale straw color with a stark white head. Aromas of banana, clove, and pronounced peppery phenols lead, and the flavor is slightly sweet malt, subtly balanced by hints of sea salt. Despite a full mouthfeel and healthy ABV, it still manages to drink quite lightly. The finish gradually builds in a warming crescendo of peppery spice.

Maimed in an accident that left him with a hunched back, Brother Joseph Zoettl worked in the St. Bernard Abbey power plant shoveling coal. In his spare time, Brother Joseph used found objects such as marbles and chunks of concrete and tile to build miniature shrines and buildings on the Abbey grounds. Over 40 years, he created 125 different models and replicas. Today, the Ave Maria Grotto covers three acres and is world-renowned as both a fun roadside attraction and an awe-inspiring collection of folk art. We have named our Belgian dubbel after Brother Joseph as a testament to his perseverance, his hard work, and his indomitable spirit. A full-flavored abbey-style ale with a complex taste and aroma, Brother Joseph’s Dubbel is filled with specialty malt and dark fruit character.

Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, brewed only about once per year, representing approximately 1% of total beer production. This beer begins with a density of 16.5º Plato is 7.5% ABV. “Rochefort 6” is the oldest Rochefort Trappist beer and was brewed empirically until the end of the Second World War. Until 1958, this was the only Rochefort beer that was bottled in both 33 cc bottles and 75 cc bottles. It has a strong malt taste and is slightly bitter.
