Take a Deduction, our abbey-style dubbel. This effervescent ale showcases malty sweetness with rich notes of toffee, cherry, chocolate and raisin. Although dark in color, this approachable dubbel features a light and dry body, accented by caramelized candi sugar.

Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish. It is a balanced quality beer with a soft feel in the mouth and a long, dry aftertaste. The Dubbel contains 7% alcohol.

In November 1992 Maudite (the damned one), was the first strong beer to be distributed in Quebec grocery stores. Maudite is a mahogany-colored, rich-tasting premium beer that has a distinctive, complex taste. Because of the warmth it releases, this strong character beer must be served cool but not cold. Perfect with pasta, red meats, stews and spicy dishes, it also makes a good aperitif and after-dinner drink. Maudite has a typically Quebecois name that is reminiscent of the legend of the Chasse-Galerie (the legend of the Flying Canoe). Legend has it that a group of lumberjacks struck a deal with the devil to fly home in their canoes, guided by Satan himself, to make it home in time for Christmas.

Deep burgundy color with a big, fluffy head. Complex fruit aromas with a layered sweetness (honey, then caramel, then toffee) with a hint of licorice and chocolate. A big, rich, abbey-style ale that dries out nicely on the finish.

The Chimay Red Cap, or Premiere, in 750 ml bottles, is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell. This traditional Belgian beer is best savoured at cellar temperature. ABV 7.0

Winter is Here is brewed with pilsner malt, white wheat malt, and soft red wheat flakes, hopped with Saaz hops, and spiced with white pepper, sea salt, coriander and sweet orange peel. Brewery Ommegang’s house yeast is used in primary and secondary fermentation. This double white ale pours a hazy pale straw color with a stark white head. Aromas of banana, clove, and pronounced peppery phenols lead, and the flavor is slightly sweet malt, subtly balanced by hints of sea salt. Despite a full mouthfeel and healthy ABV, it still manages to drink quite lightly. The finish gradually builds in a warming crescendo of peppery spice.

Maimed in an accident that left him with a hunched back, Brother Joseph Zoettl worked in the St. Bernard Abbey power plant shoveling coal. In his spare time, Brother Joseph used found objects such as marbles and chunks of concrete and tile to build miniature shrines and buildings on the Abbey grounds. Over 40 years, he created 125 different models and replicas. Today, the Ave Maria Grotto covers three acres and is world-renowned as both a fun roadside attraction and an awe-inspiring collection of folk art. We have named our Belgian dubbel after Brother Joseph as a testament to his perseverance, his hard work, and his indomitable spirit. A full-flavored abbey-style ale with a complex taste and aroma, Brother Joseph’s Dubbel is filled with specialty malt and dark fruit character.

Dense tan head, on a ruby brown colored beer. Toasted malt with a hint of grass, herbs and raisin. Beautifully balanced. Made by a talented home brewer whose beers were extremely well received at Belgian beer festivals. So well in fact, that Brouwerij DIlewyns opened in 2011, becoming Belgium's newest brewery.

Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, brewed only about once per year, representing approximately 1% of total beer production. This beer begins with a density of 16.5º Plato is 7.5% ABV. “Rochefort 6” is the oldest Rochefort Trappist beer and was brewed empirically until the end of the Second World War. Until 1958, this was the only Rochefort beer that was bottled in both 33 cc bottles and 75 cc bottles. It has a strong malt taste and is slightly bitter.

A balanced and malt-forward Belgian-style Dubbel. Rich flavors of molasses, caramel, and plum complement this beer’s sweet and somewhat strong malt profile. The addition of Belgian yeast helps the beer finish out with notes of cherry, fig, cinnamon, and clove. It’s a traditional yet approachable beer, brewed as an homage to a classic Belgian style. Inspired by revered monastic ales, the hearty, rich character of our Dubbel incorporates Tennessee Sorghum from our friends at Muddy Pond Sorghum in lieu of traditional Belgian sugars.

For the winter season, we traditionally make a Belgian-style Dubbel; a rich malty pleasure that is the perfect accompaniment to those long winter nights. Last year we decided to play around with the concept and see where it might take us. After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer. The designation of "Grand Cru" originates from the Burgundy region of France. Brewers have taken the term and applied to it more elaborate, aged and reserved versions of their beers. Our Belgian-style Dubbel -a great beer itself with a loyal following- has been taken to the next level by the careful blending and aging techniques. We believe we’ve created a classic to be enjoyed throughout the winter months. For 2010, we offer a very limited release of (only 48 barrels) our Winter Grand Cru. In this batch, we’ve added over 100 pounds each of locally sourced Zante Currants and Black Mission Figs. We aged 20% in used Bourbon barrels for 12 months - in which time the warmth of the Bourbon, along with toasted oak and vanilla flavors were released from the wood. Whole Vanilla beans compliment the wood and bring forth a velvety smoothness and richness. The fig flavor is forward on the nose along with the bubble-gum/banana ester derived during fermentation. The taste starts with the rich sweetness of fruit, carries through with a rich mellow center and finishes dry, allowing for another glass as you sit by the cozy fire. Á votre santé! Pairings: Lamb, wild game, charcuterie, pâté, duck, rabbit, braised short ribs, cherry reductions, bread pudding.

A highly traditional fermented ale brewed with malt and top quality hops without any chemical additive. Brown and coppered in appearance, this ale is characterised by its rich and scented flavour as well as its velvety taste.

St.Bernardus Prior 8 is a traditional abbey ale brewed in the classic "Dubbel" style of Belgium's Best Abbey Ales. It has a ruby to purple color, smooth, creamy richness of texture that is almost oily, and a malt-fruit complexity reminiscent of coconut. (8% alc. vol.) It finds the perfect balance between sweet, bitter and malty tastes. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren (see history)

Grimbergen Double-ambrée is a dark Burgundian top fermentation beer with bittersweet taste having a light caramel hint. Some pleasant notes of raisins and dry fruit are felt in the Grimbergen Double-ambrée’s aroma.
