Acidulated white wheat, raspberries and an inoculation of lactobacillus in the fermenter give this American ale its tart, fruity taste. Low hop levels let the special sour flavors dominate, and rice syrup helps yield a particularly light finish and body. This is a real summer refresher.

This delicious creation was truly a product of creativity, ingenuity and luck. In the summer of 2013 we took a test batch of our sessional sour summer ale, Provincial, that didn't quite hit gravity, and decided to have some fun with it! We added a heavy dose of raspberries. The end result was so delicious, we decided to recreate it! This delightfully tart fruit beer is stimulating and refreshing, with a citrusy berry aroma which transitions to a subtly sweet and tart finish. - Pairs well with Day Drinking.

Strawberry Darling is a tart Berliner Weisse brewed with heaps of strawberries and a pinch of peach and plum. This charming beer strikes a balance between soft wheat and ripe strawberry, then finishes with a gentle, sour twang. Whether you’re on a city stoop or a farmhouse porch, Strawberry Darling is the perfect beer for slowing down and enjoying the moment.

Pouring the Nomader Weisse from its can, a bright and fizzy golden body just a few shades darker than the aluminum container itself emerges, converging into a medium-sized, bristling white head that dissipates in mere moments. A cloudy, sediment-speckled murkiness lingers in the center—a characteristic feature of any Berliner Weisse. With just a slight tilt of the glass towards the face, the beer’s pungent, sour aromas of lemon and Granny Smith apple come forth, but a tinge of sweet, malty wheat curtails the dominant sour smell so as not to prematurely overwhelm the drinker. The nose doesn’t seem to stray too far for your standard Berliner Weisse, but just after taking the first sip of the Nomader Weisse, one begins to see how Evil Twin’s Jeppe Jarnit-Bjergsø left his nomadic mark on the landscape, or in this case, the Berliner Weisse style. The tangy notes of lemon and apple, just as in the nose, playfully bite at the drinker’s teeth on contact in typical Berliner fashion. However, the Nomader soon reveals Jeppe’s modern day tinkerings with slight hints of white grape, an effect akin to transporting a German Oktoberfest in its entirety right to America: somewhat bizarre, but still delicious.

Thirty miles north of Barrelworks lies the fertile Santa Maria Valley. Its warm days and cool marine layer-fed evenings allow for a cornucopia of fruits and vegetables to be grown in its rich soil. One of Santa Maria’s crown jewels is locally grown raspberries. We jumped at the opportunity to ferment fresh local raspberries with one of our Barrelworks creations. Behold Bretta Rosé! A low-alcohol Berliner Weisse style ale, acidified and matured in French oak puncheons for 6 months, is the foundation for this gem. Add 1000 lbs. of fresh raspberries, allow a secondary wild fermentation for 4 more months and voila (!), we have a crisp effervescent concoction, bursting with raspberry perfume and flavor, a rosé color, bracing acidity, and a clean and refreshing finish.

Sour Fruit Beer, wild fermentation with a critical Brazilian Fruit

To create our latest #pastrysour, we decided to recreate a beer as close to Grandma J’s original strawberry rhubarb pie recipe as possible. We started by adding lactose sugar to our kettle-soured Berliner base, then fermented it with over 500 lbs of strawberry purée. After fermentation, we aged the finished beer with rhubarb purée, graham cracker and vanilla to give it the signature pie character. The sweetness of the strawberries and lactose and perfectly balanced by the tartness of the base beer and rhubarb, resulting in a beer that even Grandma J would be proud of.
