Technically, there is no such thing as a traditional Belgian stout, but we went ahead and made one anyway. In creating the beer, we took the aspects we loved in Belgian beers and used them to craft a stout. We brew Allagash Black with 2-row barley, torrified wheat, oats, roasted barley, chocolate malt, black malt and hop with Northern Brewer and Glacier. A generous portion of dark caramelized candi sugar produces a hint of raisin in the finished beer. The addition of oats lends Black a silky mouthfeel, which is enhanced by rich flavors of coffee and dark chocolate.

Gulden Draak has a strong scent of alcohol, which hampers the ability to easily define its aroma. Still, there is a powerful fragrance of barley, ripe plums, and cherries. Different testers worldwide mention a sweet coffee aroma. Compared to the aroma, the taste is influenced somewhat less by the alcohol. It hints at sour cherries and brown sugar. The aftertaste is somewhat bitter. Gulden Draak also has a high alcohol content for a beer at 10.5%.

We started brewing Gnomegang in 2010 as a collaboration with our friends over at Brasserie d'Achouffe in Belgium and it quickly became a fan and staff favorite. Chouffe's fruity, spicy yeast is a signature found in every Chouffe beer, and a welcome addition in this impactful blonde ale. Gnomegang has a rich, translucent golden hue with a big, fluffy, white head. Distinctive clove aromas, combined with yeasty fruitiness typical of Chouffe beers. Flavors include ripe fruit, clove, light caramel, non-cloying candy sweetness, smooth maltiness, and well-balanced hopping. Dry, warming finish that lingers gracefully.

Carrots and Sticks is a strong Belgian blond base beer that was brewed with walnuts, raisins, cinnamon, allspice, nutmeg, and lemon zest. Fermented with Nordic Kveik yeast and carrot puree, the beer was then laid to rest for 14 months in freshly dumped bourbon barrels. After the final blend, the bourbon barrel aged beer was conditioned on Ugandan vanilla beans.
