Tobias Chardonnay

100% Chardonnay, the fruit comes from our vineyard in Mendocino County, where we have exceptionally cool nights and warm days during the ripening season. It is a fine example of the unique characters from our vineyard and of Chardonnay from Potter Valley, Ca. Flavors of rich apple with a firm acidity Aromas of vanilla, tropical fruit, ripe melon and a hint of spice. 30% malolactic fermentation, you would question this as there are no buttery hints. Filtered prior to bottling. Racked at 4 months, at 9 months and again prior to bottling. 30% new French Oak used for the first six months, then 10% the last 6 months, aged 1 year
