Vintage Rose made in the Traditional Method

This dry, full-bodied red wine is a balanced fusion of dark-red berry and chocolate flavors with a soft mouth-feel and juicy, lingering finish. 39% shiraz, 16% cabernet sauvignon, 11% Malbec, 11% Merlot, 10% Petit Verdot, 7% Cabernet Franc and 6% Pinotage. Will age well up to 5 years.

The neutral base wine was produced from Chenin Blanc and Colombard grapes and partially forti ed with neutral wine spirits. Following inoculation with a or yeast it was left for 12 months before being introduced into the Solera system for maturation. In preparation for bottling the wine was blended with sweet Jerepigo to achieve the desired sugar level. Additional notes of Sherry: Solera system: The Solera system is a very old traditional method for the making of sherry and aims to ensure a consistency of product. It involves the use of barrels for maturation and each year a percentage of between 10% - 30% is removed for bottling. This allows the barrel to be topped up with wine that has freshly come off flor. Flor Yeast: A film of yeast on the surface of wine protecting the wine from oxidation and converting wine acid into aldehydes, the typical flavour of sherry products. Sherry: A fortied wine made from white grapes produced from an area in Spain near the town of Jerez. Only sherry from this region (sherry triangle) is allowed to be labeled as sherry. Being respectful of the regions of the world, the word "Cape" is added to indicate a wine made in the traditional sherry style.

Balanced entry reflects classical Cabernet Sauvignon flavours, dark berries, country herbs and a hint of fresh red cherries. Medium weight palate displays an elegant and very approachable tannin.

Opens with a crisp, lively bouquet of tropical fruit such as passionfruit and melon, crisp citrus and subtle honey flavors lingering onto a fresh, creamy finish. With its balance of acidity and zesty fruitiness, this wine makes a wonderful aperitif. Matured in stainless steel for 6 months.

Traditional Method made with 100% Chardonnay

My Shiraz, Grenache and Viognier parcels are harvested separately, at the appropriate phenolic ripeness, with the Shiraz contributing a rich sweet fruit profile with a spicy, earthy dimension being added by the Grenache and Viognier. The various lots are vinified separately. After destemming the Shiraz and Grenache are fermented “whole berry”. They are pumped over regularly to ensure good extraction and are drained and pressed after fermentation is completed. The Viognier is given 12 hours of skin contact before draining the free run juice only for cold fermentation in stainless steel tanks. After fermentation the various components are blended before being matured in old, French oak barrels, for 14 months before bottling. I can be appreciated now, however, a careful cellaring for at least another six years is also possible.
