Sauvignon Blanc from Frankland River. We’re down south-west of the continent in this cool climate, isolated wine region. Whites are all about high acid here, with riesling and sauvignon blanc the mainstays. The Savvy is picked based on flavor and acid profile. It comes from Blocks 05, 15, 16, 18 picked during the last week of February. It undergoes a long, cool fermentation in stainless steel. Time on lees also helps with yeast autolysis adding mouth feel while still retaining the pure clean acid freshness of the wine. Minimal fining, crossflow filtration. The end result is a balance between the tropical passionfruit notes known to the region, and delicate floral herbal nuances with capsicum and citrus notes.

Both the Sauvignon Blanc and Semillon fruit for this wine were harvested on a cool March evening to retain aromatics of the fruit. The Sauvignon Blanc and Semillon were processed individually with some skin contact in the grape press. Following settling the wines were racked and inoculated for ferment in stainless steel vessels. A combination of yeasts were used to enhance the varietal characters and to produce fresh, fruity, clean wines. Fermented at cooler temperatures for the preservation of fruit aromas and flavours. After a few weeks on yeast lees, the wines were racked and the individual components assessed and blended. The final blend was given a light fining before being filtered and prepared for bottling.

A great example of these two classic varieties from W.A.’s cooler vineyard sites, our Cabernet Merlot has ripe berry and blackcurrant fruit flavours beautifully balanced by Frenck oak characters and moderate tannins. After closely monitoring ripening, Cabernet and Merlot grapes were harvested at optimum flavour ripeness 85% Cabernet Sauvignon and 15% Merlot Aromatic dark berry fruits with dense plum fruit aromas and attractive smoky oak characters. Has delicious fresh berry fruit flavours of blackberry & mulberry; the good depth of these fruit flavours are complemented by the slightly ‘chewy’ and lightly drying tannins and gentle acidity which combine to give our Cabernet Merlot it’s good length of flavour. Enjoy now or even more so after a couple of years in the cellar.
