The majority of the grapes for Le Temps Infini Malbec come from the Lot region in South West France near Cahors, France's natural home for Malbec. In making Le Temps Infini Malbec, Communal Brands partnered with one of the foremost experts in the region: a family estate compromised of 27 hectares of organically farmed vineyards, where a younger generation has been farming without herbicides and chemicals since the 1990s. The vine ages range between 15 and 30 years. The grapes were fully destemmed and crushed, followed by a slow fermentation at 20°C. The wine macerated on the skins with punch downs for 15 days. It was then racked off the skins, followed by 8 months of aging in concrete tanks. Light filtration was done before bottling. The goal was to avoid an overly intense extraction and to showcase the beautiful floral and fruit notes that Malbec achieves in South West France. This new packaging represents a balance between form and function. It is eco-friendly and convenient, while still being elegant, eye-catching, and memorable. It has all the convenience of the bag-in-box with none of the stigma.

Perhaps the most representative wine in this week’s tasting of the unique breadth of Olmstead’s portfolio, Seigneurs de Peyreviel brings us a little something for everyone in this southwest French red blend. The Cotes de Millau is just about smack dab between Bordeaux and the Rhone Valley, separated both culturally and physically from much of the country’s wine traditions. Constituted of 50% Syrah, 30% Gamay, 15% Cabernet Sauvignon and 5% Fer Servadou (perhaps France’s most untamed variety), each grape asserts itself at some point in the arc of this wine’s profile, no matter how little is in the blend. We’re offered the inky fruit and peppery spice of Syrah, the juicy appeal and playful lift of Gamay, the hard structure and broad shoulders of Cabernet, and the wild, feral complexity of the Fer. Further, it’s rare that one can taste something so individual at such an inexpensive price.

Geography: The vineyard, located in the Jura, is 80km long and 7km wide, with grapes planted at an average altitude of 300 meters. The vineyard spans from Champagne-Sur-Loue to Saint-Jean-d’Etreux, between the plain of Bressane and the foothills of the Jurassian plateau. It is located on the West-facing slopes of the Jura Mountain. We call this region the “Revermont” or “Bon-Pays.” Occasionally we source from additional vineyard sources outside of the Jura. Soil: The soils are made up of limestone boulders coated with brown clays or clay with cherts from some of the original limestone boulders. The vineyard’s subsoil primarily consists of marl (iridescent red marl and green from Tria, gray marl from Lias). Vinification: Méthode Champenoise with fermentation at a very low temperature to preserve the aromas. Matured 9 months on the lees after second fermentation. Color: Pale gold with a hint of green. Fine bubbles. Bouquet: Intense aromas of white flowers and citrus fruit. Palate: Creamy and smooth with lingering aromas and a distinctive sweet, fruity flavor. Wine & Dine: Great as an aperitif with a few mint leaves or red berries or paired with desserts like a fresh berry tart, a soft cheese plate, or fruit salad.

In 280 A.D., after the order was annulled by another emperor, Probus, the vine was planted in the Quercy region once again.
