Established in 1988, Seven Hills Winery is proud to be among the founding estates of Walla Walla Valley. As pioneers who first championed the region, our heritage is built on longstanding relationships with the most renowned growers in the Northwest and a deep knowledge of the land. This wine is drawn from the oldest blocks of one of the most historic, esteemed vineyards on Red Mountain. A compelling blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, it showcases the muscular, brooding elegance of the appellation. The wine has a rich and expressive nose, displaying black fruits and tobacco leaf with hints of dust and desert herb. The palate is full and opulent, with substantial firm, ripe tannins well integrated and sufficiently balanced with rich flavors of blackberry, licorice, forest floor and creamy oak.

Lonely Heart, we called on Kilpsun Vineyard, one of Washington’s finest sites for cabernet sauvignon. Planted in 1989, the cabernet sauvignon from Klipsun Vineyard provides texture, power, and an unmistakable character. The support of Obelisco Vineyard cabernet sauvignon adds intense richness, depth and layers of dark fruits. When working with fruit of such extraordinary quality, we strive to elevate and support its inherent greatness without dominating the profile with heavy-handed winemaking techniques. Our goal is to allow the amazing fruit quality and finished wines to speak for themselves. Specific oak cooperage is thoughtfully selected to draw out the innate beauty and power in the wine without overwhelming the aromas and flavors. Great care is taken in the cellar to delicately handle the must, which is never pumped and is punched down twice a day to create gentle extraction. Once fermentation is complete, the wine is lightly pressed to barrel where it will age for 21 months in 88% new French oak.

Our focus is crafting Cabernet Sauvignon that expresses the individuality of our namesake vineyard and captures the distinct character of Washington State’s best appellations. Red Mountain benefits from heat, low rainfall, and sandy loam and gravel soils that produce highly concentrated fruit. This wine offers textural dimension, power, and intensity. From fragrant notes of strawberries, boysenberries, earth and toasted woods to richly layered flavors of cherries, currants and anise, it demonstrates vibrancy and a long, lifted finish along with firm tannins that will allow it to mature gracefully for years to come.
