The grapes for this Reserve wine were grown at high elevation, 950 meters, in the heart of the Judean Mountains, aged for 24 months in the finest French Oak Barrels and combines spicy aromas with a touch of vanilla. Wine production process The Shiraz grapes arrived at the winery in the early morning after being mechanically harvested. The grapes were destemmed and after a gentle crush, the must was transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasted for 7 days, at a temperature of 25°C. Upon completion of the alcoholic fermentation, the wine was transferred to a storage tank and the skins were gently pressed into the same tank by a pneumatic press in order to begin the malolactic fermentation, which is intended to stabilize and soften the wine. After the malolactic fermentation, the wine was racked from its fine lees. The wine then matured with French and American oak wood for 3 months. Judean Hills Blanc 2016 reflects the character and quality of our vineyards, located in the ancient region of Judean Hills. The wine is made from Chardonnay (90%) and Sauvignon Blanc (10%) grapes, grown on old terraces. The soil is shallow Terra-Rosa with subsoil of limestone. The wine went through cool fermentation and Sur-Lie aging for 8 months in French barriques and stainless steel tanks. The wine did not go through malolactic fermentation in order to retain the natural acidity and freshness of the wine. It drinks beautifully today and will keep developing in bottle during the next 2-3 years.

This Cabernet Sauvignon captures the essence of grapes grown at the lofty altitude of 900 meters in the unique, cool climate of the Gush Etzion region. For 19 months, the wine matures in oak barrels until attaining a flavor that is, at the same time, complex and elegant, with fragrances of cassis and berries.

In 1848, with the rejuvenation of the Jewish settlement in Jerusalem, Yitzhak Galina-Shor opened the first winery in Israel, in a basement adjunct to the Western Wall in Jerusalem. During the eight generations since its foundation, 1848 Winery continued to grow and gain recognition for its quality wines, re-positioned into several locations, but maintained a tradition of wine production as a way of life.
