La Giustiniana is, without a doubt, an elite Gavi expert. This is a texural wine made entirely of hand-harvested Cortese from the region’s best vineyards. The calcareous soil renders an elegant expression of the grape, and a long, cool fermentation in stainless steel draws out bright herbal notes that linger on the finish. The pronounced acidity and refined profile of anise, green apple, and almond make this dry white a versatile accompaniment for many meals. It shines with fish and light pastas, or sipped as an aperitif.

No sulphur added Gavi! 100% Cortese grapes, farmed biodynamically. Fermentation with native yeasts in steel tanks with temperature controls. Lightly filtered. Ran by Massimiliana Spinola and Henry Finzi-Constantine, L’Azienda Vitivinicola Castello di Tassarolo is situated in the commune of Tassarolo in the heart of Gavi in Piedmont and consists of 20 hectares of vineyards that surrounds the winery. The variety of vines cultivated on the estate are “Cortese di Gavi”, Barbera and some Cabernet Sauvignon. The Spinola family, who has inhabited the castle in Tassarolo in some form or another since 250 AD, has been making wine from these vines since the year 1367! In 2006 Henry and Massimiliana began developing biodynamic methods of viticulture that guarantees the maximum respect for nature and the environment. Henry, born and raised in London, is the first to develop working heavy horses in the vineyards in the North of Italy. He concerns himself with working the land and the health of the vines. He is collaborating with other experts in the field, in designing and developing draught equipment for biodynamic farming methods in the vineyards. He has also been a passionate student of Rudolf Steiner’s philosophies for over 20 years, and applies this methods to his work in the vines. Henry currently holds courses that teaches the theory and practice of heavy horses within the vineyards, forest and fields. And is developing a nationally recognized certificate for the various fields of work suitable for implementing heavy horses, in regards on promoting heavy horse work in Piedmont. Massimiliana works closely with their enologist Vincenzo to make the wines in the cantina. Together they have developed a method of making white wines without any added sulfur and without oxidative properties, a difficult feat for many involved in Natural Winemaking. They attribute much of their success in this endeavor to the health of the soil and grapes afforded by Henry’s biodynamic work. - Jenny & Francois

Cortese grapes come from a native vine that boasts very ancient origins and it’s wide-spread throughout the alessandrino area. Known for its easy drinkability and for its immediate pleasantness it gives rise to wines that are clean fresh and vital. In the municipality of gavi where this wine gets its name this production is protected by the docg label which guarantees the product’s high quality. Wine-making: the de-stemmed grapes are subject to soft pressing. Alcoholic fermentation occurs in steel containers maintained at controlled temperatures. Once fermentation processes have finished the wine is left to rest in yeasts for at least four months before bottling. The wine: this wine is a straw-yellow hue of mid-range intensity. It boasts clear floral scents accompanied by a hint of melon and a light suggestion of citrus. To the palate it’s elegant very fresh and tasty balancing the variety’s typical acidity with a ‘gentile’ profile with good drinkability

Harvest is immediately followed by soft pressing and “in bianco” vinification at controlled temperatures in stainless steel vats. This wine has an alluring straw-yellow colour, fruity scents (apricot) with hints of citrus and meadow flowers; a fresh, harmonious taste with a pleasantly fruity background.
