"Vine age: 45 years Exposure: East Soil: Rocky limestone Viticulture: Organic & Biodynamic Vinification: The grapes are hand-harvested, sorted, and vinified with around 50-60% whole bunches. The must spends 17 days in tank with between 5-7 punch-downs by foot as well as some pump-overs. After pressing, the juice settles for two weeks and is put into barrels, around 30% of which are new. After 14 months of élévage, the wines are racked into tank where they rest for 3 months and are bottled unfined and unfiltered. David's Côte de Nuits Village comes mostly from the village of Brochon, just next to Gevrey-Chambertin."

This is a special cuvee which comes from a plot of the same name "Les Chaillots" in old Burgundian French which means ‘Les Cailloux’ (the Pebbles) which exactly describes this plot where the soil is very stony with natural drainage. The soil produces complex wines which are expressed in fruity notes of cherry, blackberry & forest floor. This wine should be consumed within 5 to 7 years after bottling.
