To improve the quality, we decided to polish 5% more. Complexity and elegance of taste are surely increased by its 5% difference. In the past, it was impossible to make this improvement when our production size had been smaller, because cost of production could not be covered. Now, we make Junmai-Daiginjo sake for 35,000 koku (=6,300kl) per year, and are able to manage the increase of polishing ratio. It will be our pleasure if you enjoy Dassai 45.

Round and clean this brew is extremely quaffable. Can water be dry? Well this sake drinks like dry water with hints of rice and powder sugar elements. As the fluid warms look for some vanilla tones to surface, but balance is the key to this "Classic's" success. An everyday drinking sake that tastes like royalty in a glass. In 1806, the Senkin brewery was established. Their brand is based off the Japanese crane and their name is derived from the words “wizard” and “bird”. The water used in brewing is from the same source that is used to grow rice. They call it a “domaine” like the french term for wine producer who own their own vineyard. A very stylish sake that pairs well with Japanese and French cuisine. Keeping the unique Kame no O sake rice trait alive, it has a balanced flavor with accents of lychee and cranberry backed by firm mineral. This pairs especially well with Japanese cuisine.

Discovered 100 years ago, the yeast known as kuratsuki kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. This Junmai Daiginjo exhibits notes of apricot and young banana that starts off soft and mild, giving way to the smooth umami of sake rice, finishing dry with balanced acidity.
