The aroma factor on this Daiginjo is like a basket filled with ripe dripping fruit including melon, berries, pear and a hint of cotton candy. This Shizuku-style (drip) sake is an adventure into the realms of expansive flavor meets incredible smoothness. A silky soft fluid that touches on a mineral sweetness and yet dances dry in the finish. The nose and flavor impression spell sweet but this expansive Daiginjo drinks dry and clean; and keep a look out for faint caramel and anise undertones. In street vernacular this deeply flavored sake drinks "like butter!" Completely colorless in the glass this sake has a classically daiginjo floral nose with hints of jasmine tea and just the tiniest hints of fresh pink bubblegum. In the mouth it is smooth and extremely silky in texture with lovely acidity and a floral, rainwater quality that makes for an incredibly clean experience on the palate. Effortless and ethereal are two words that come to mind.

The rice used in making IKI is polished down to 45% of the grain remaining and the sake is brewed at low temperatures so that all of the delicate and fruity aromas are extracted from the rice without any of the unwanted flavors caused by rice proteins. The Ginpuu sake rice used in IKI Sake is grown by the farming cooperative known as Muumin Village located in Asahikawa City, Hokkaido. This area is well known and highly regarded for it’s agriculture and natural beauty. Takasago Sake brewery has a history of over 100 years and was one of the first breweries in the area. They currently produce over 30 brands of sake.

This daiginjo is light and airy. It has upfront notes of white pepper that fade into dried apricot and citrus. It should be served chilled but also appreciated at room temperature. Ginjo sakes are made with the slight addition of brewer's alcohol: this lightens the sake and brings out additional flavors and aromas. The highest level, daiginjo, is made with rice that has been refined to 50% or less of its original size. This daiginjo is made with rice that has been refined to 35%. The pinnacle of the saké brewer's craft, handmade by the only master sake brewer, Yoshio Koizumi, and wholeheartedly endorsed as one of the best sakés on the market. The brewer employs the rare “shizuku” method of filtration where the sake is not put through a press, but instead allowed to drip slowly through cotton bags. The Murai family paid extra attention to the fine details with not only filtration, but even the bottle shape was designed specifically to enhance the sound of this luscious brew being poured.
