BOTANICALS Juniper, Cucumber, Lemon, Sage, Lavender NOSE On the nose, you'll notice crisp, bright aromas of sage and juniper. MOUTHFEEL Crisp and cool sensation that steadily softens. SIP You’ll taste bright lemon, which then gives way to a warm, spicy, lavender finish. Further along, you’ll experience the cooling effect of the cucumber. Each sip bolsters the botanical flavors, along with a continuous presence of piney juniper. The Botanical is a wonderful way to fancy up old classics like Arnold Palmers, mimosas or a gin fizz. It also mixes beautifully with native Tuscan herbs, from red valerium and thyme to lemon balm and mint. To round out straight martinis and a neat drink, try lightly sweet garnishes like candied ginger, cinnamon sticks, pear, dehydrated apple or cucumber. Uncle Val’s is a small-batch botanical gin inspired by Zio Valerio’s (zio means ‘uncle’ in Italian) love of gardening and Tuscan cuisine. The botanicals were chosen because they were not only Uncle Val’s favorite cooking ingredients, but also happen to make a truly unique and smoothly delicious gin. We forage wild plants from the mountains around the distillery to make this extraordinary gin. These sustainably picked plants go fresh (not dried) into the still within hours of foraging. They are painstakingly slow-distilled to tease out delicate flavors in tiny batches. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first, putting this gin on a whole other level of flavor. The knowledge, experience and effort that goes into each bottle is what makes it so special. We love it in a G&T garnished with a wedge of grapefruit and a freshly torn sprig of basil. Or try it in a Tom Collins.

Deepwells Botanical Dry Gin is a unique farm-to-bottle small batch gin produced by Long Island Sprits, home of the award-winning LiV Potato Vodka. Long Island Spirits uses 100% locally harvested NY White Round Marcy potatoes and pure glacial water from the Magothy Aquifer (aka “Deepwells”) to craft the base spirit. The potato base spirit is triple distilled to 191 Proof using custom 650 Liter copper pot stills and twin 19 plate copper rectification columns. The nuanced flavors of 28 local and exotic fruits and botanicals are delicately infused with the base spirit, first in the pot still and then in a custom basket inside the botanical gin chamber. A special blend of botanicals macerates in the pot still for 36 hours before the vapors of the blended spirit travel through the gin basket to infuse with the remaining botanicals. Very few Gin producers make their own neutral spirit and rarer yet is a Gin that uses potato as its base spirit.

The origins of Rye whiskey date back to colonial Pennsylvania. Early European settlers brought with them the tradition of distilling and as farmers of Rye they quickly made the region famous for its fine Rye whiskey. They also brought with them a set of Old World traditions that evolved in the New World into a form of Folk Magic known as "Pow-wow" (from the native Algonquin term for "gathering"). One common Pow-wow practice involved making various types of herbal recipes. Inspired by an old Pow-wow recipe for infusing Rye whiskey with herbs & spices, we have taken a fine Rye whiskey matured in new, charred oak barrels, and carefully infused it in tiny batches, over an extended period of time, with Saffron (also grown by early settlers), Orange Peel, and other whole botanicals. No extracts or artificial colors are added. Pow-wow is slowly handcrafted with the finest ingredients to create unique, botanical layers of complexity not found in any other whiskey. Pow-wow Botanical Rye can be enjoyed like any fine whiskey: neat, on the rocks or in a variety of cocktails.

We deviated from the standard London Dry style to create a unique and refreshing perspective with floral and citrus notes unseen in this category. For citrus we use freshly peeled pink grapefruit. Elderflower, hibiscus, and chamomile give Oppidan American Botanical Gin a light floral nose balanced by the spice of ginger, cardamom, and cinnamon. The result is a superbly balanced gin that works well neat or in your favorite gin cocktails.
