This truly small-batch bourbon starts with traditionally grown corn, rye & malted barley. All of our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed, distilled, and barreled in our Woodinville distillery, then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington’s extreme temperature cycles promote the extraction of natural flavors from the oak. Prior to being coopered, the barrel wood is seasoned in open air, rain, wind, sun, and snow for eighteen months, softening the wood’s harsh tannins. The barrels are then slowly toasted and heavily charred to further enrich the wood’s desirable flavors.

The Daiquri is arguably one of the most well-known cocktails in the world. Similar to the “grog” of British sailors in the late 1700s which included rum, water, lime, and sugar, the Daiquiri was refined as a cocktail and popularized in early 1900s New York. Seattle Distilling Vodka is handmade on Vashon Island from hard red winter wheat grown in Moses Lake, Washington. Our vodka is an Old World style spirit, unfiltered and buttery in texture. When you use the best local grain to make vodka, you don’t want to scrub those flavors out with charcoal. Most vodka’s have little or no flavor because they are destroyed by over-filtration and chill-stabilization. We took great care in filtering our vodka—ensuring its flavors remained and particulates removed.
