This truly small-batch bourbon starts with traditionally grown corn, rye & malted barley. All of our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed, distilled, and barreled in our Woodinville distillery, then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington’s extreme temperature cycles promote the extraction of natural flavors from the oak. Prior to being coopered, the barrel wood is seasoned in open air, rain, wind, sun, and snow for eighteen months, softening the wood’s harsh tannins. The barrels are then slowly toasted and heavily charred to further enrich the wood’s desirable flavors.

This inaugural release of Westland Winter celebrates the stark contrasts of the season. At once brisk and cozy, austere and comforting, it hovers over the threshold of the season’s two theaters, the hinterland and the hearth. Nine casks were married for this release. Smoke is the one constant, its waft on the wind carrying us in and out of each scene. The ex-bourbon casks shape the whiskey into a fully realized portrait of winter, but this release’s ascendant feature is a single ex-Olorosso hogshead of peated spirit. This sherry cask, with its immense richness and assertive peatiness, reminds us that this time of year togetherness is warming and indulgence is forgiven.

This medium to full bodied bourbon presents a classic profile of vanilla, caramel and cherry on the nose - rich and compelling. Sweet, smooth corn combined with brown sugar/maple syrup and oak is balanced with a notable spice contributed by the higher than normal rye content. The finish is beautifully long with notes of buttery oak, toffee, and again the cherries make an appearance. Our ‘Old Tom’ style gin is the newest incarnation of Counter Gin from Batch 206 Distillery. To produce Counter Gin ‘Old Tom’ , we take the existing recipe for our ‘New-American’ Style Counter Gin and rest it for approximately 6 months in Hungarian Oak Chardonnay barrels. The Resulting spirit is reminiscent of the finest dry gins, but with a subtle sweetness and spiciness that only a leisurely stay in these particular barrels can provide. This unique gin lends itself particularly well to sipping neat, on the rocks, or mixing with ingredients that have savory and herbaceous overtones.

Our flagship Westland American Single Malt Whiskey represents the truest expression of our house style. At the core of this whiskey's flavor profile is a grain bill comprised of five different roasted and kilned barley malts giving our whiskey a character unique to Westland Distillery. The base is a pale malt, grown in the State of Washington. To that we add specialty malts, a concept inspired by the vibrant craft brewing culture of the Pacific Northwest. Deep and rich in flavors, these specialty malts contribute to the whiskey notes of chocolate, nuts, cookies, pastries, mocha, caramel and raisins. Our Belgian brewer's yeast further enhances flavor development, creating fruity esters during fermentation. As hidden away as its namesake suggests, and just as tenacious, the neighborhood of Ivy City is located in northeast Washington DC. Its rich history spans from a longtime connection to the city railroads to its recent emergence as a destination for vibrant local businesses. Ivy City Gin is a new American dry gin distilled from locally-sourced grains (63% rye, 26% corn, and 11% malted rye). The complex yet well-balanced taste profile features forward notes of Juniper and Spicebush, and a subtle bouquet of eight additional botanicals.

Our super premium vodka is combined with pure sparkling water and natural flavors for a refreshingly great drink. No sugar or sweeteners! Meyer Lemon is a wonderfully light flavor made with a combination of real Meyer lemon oils from the Messina region of Italy in Sicily, Meyer lemon oils from California, Mexican Lime oil and extracts from the bark of Ho Wood tree. This creates a lemon flavor and aroma that tastes like a perfect vodka soda with a fresh cut lemon peel.

Faintly emerald in color with a citrusy, herbal bouquet of Tuscan Blue rosemary. We filter our vodkas once using minimal charcoal to retain the character of locally-sourced grain, while our fractioning still ensures a superior clarity and sharply-focused structure. Rosemary, a ubiquitous herb in the Pacific Northwest, is harvested by hand for peak freshness from local gardens. This vodka offers a finely textured finish with notes of caramel and vanilla.

Seattle Distilling Idle Hour Whiskey is a single-malt whiskey crafted from barley grown in the Palouse. We add just a touch of local wildflower honey as we ferment the wort, lending a subtle sweetness and bourbon-ish nose. We barrel age at 100 proof in French oak casks that first aged local cabernet sauvignon (from Andrew Will Winery), adding a little fruit to the mix. We char and recooper the barrels, adding a nice smoky note. The taste is full, with a pure grain flavor and notes of oak and biscuits.
