To craft DoubleWood 17 Year Old, David Stewart, who celebrates his 50th year at The Balvenie in 2012, returned to one of his most celebrated achievements – consecutive maturation in two different types of cask, a process often referred to as ‘cask finishing.’ This technique is at the heart of The Balvenie DoubleWood – it sees the whisky matured first in American oak barrels, which impart soft sweet vanilla notes, before being transferred to European oak sherry casks, where the second cask aging adds rich spicy flavors, depth and fullness of flavor. An elder sibling to the popular DoubleWood 12 Year Old, this new aged version shares the same DNA and the honeyed, spicy characteristics as the 12 Year Old, but it is distinctly different, with deeper vanilla notes, hints of green apple, creamy toffee and a striking richness and complexity. We use casks that once contained premium Caribbean rum to finish our 21 Year Old expression. It’s the details that matter. This expression spends four months finishing in Gran Reserva barrels selected by our Malt Master, adding to its distinctive and complex flavour. In the first experiment of its kind, Malt Master Brian Kinsman collaborated with Seb Jones, an entrepreneurial Speyside brewer, to create a new craft India Pale Ale and pioneer the way for a new kind of single malt Scotch whisky. Brewed in bespoke craft India Pale Ale barrels, this single malt expression is imbued with unique zesty citrus notes of ripe green apple, William’s pear and spring blossom. This whisky has been drawn from the most exceptional casks within our traditional warehouses. Produced in the traditional BenRiach style, the BenRiach 25 Year Old is non chill filtered and is bottled at natural colour. The Macallan Triple Cask Matured 12 Years Old is crafted in a triple cask combination of European and American Sherry-seasoned oak casks and American ex-bourbon oak casks. This complex combination of casks delivers an extraordinarily smooth and delicate character full of sweet citrus, vanilla, nutmeg and lightly toasted oak.

Part of the Distillers Edition range, this Cragganmore single malt Scotch whisky was distilled in 2000 and bottled in 2013. As with many of the Distillers Edition releases, it has been given a rather interesting finish, spending time in Port pipes before bottling for an added depth of flavour.
