Ed Hamilton is a modern pioneer of rum, a man who single handedly discovered and brought countless Caribbean rums to the US market. The molasses used at Demerara Distillers Ltd comes from Guyana and contained 65% dissolved sugar, one of the highest sugar contents of any molasses found in the Caribbean. The high sugar content is attributed to the age of the Guyanese sugar mill. Demerara Distillers Ltd. utilizes a variety of column and pot stills the company acquired through acquisitions over the past 300 years. Among the unique stills are a wooden pot and a wooden column still that distill the heavier rums while copper and stainless column stills are used to make lighter rums.

Chairman’s Legacy is a tribute to Laurie Barnard, the“Chairman” of St. Lucia Distillers who inspired and created the iconic brand Chairman’s Reserve. His vision to define and reinvent the Saint Lucian rum category was unlike anything the rum category had seen before or has seen since. While other distilleries were purchasing column stills to increase production, Laurie was investing in eclectic barrel types, small pot stills, a proprietary yeast strain, and sugarcane. He believed that the best rum was not achieved from one barrel, but by blending different components together of different ages, finishes, styles, and base materials.

Admiral Rodney Royal Oak, the original Admiral Rodney blend, contains 7-12 year old Coffey still rum that has been aged exclusively in previously used Bourbon casks and blended to perfection. Bright amber color with a nose of prunes, raisin fruit, toasty oak and tropical spiced. Intense mouth-feel of sweet sultana fruit, tobacco, and chocolate, with vanilla from the oak. Complex finish with sweet fruit, caramel, and spice.

Chairman’s Reserve The Forgotten Casks is an extra-aged sipping rum crafted to mimic rum found in the original forgotten casks of Chairman’s Reserve, which were preserved from St. Lucia Distillers horrific fire on May 2, 2007. The cellar master was forced to find unusual storage space for his rum barrels during the rehabilitation of the distillery, and these casks were misplaced during this time of confusion. These “forgotten casks” resulted in rum which was too old for the original Chairman’s Reserve blend, so it was decided that this rum would be released on its own and was received with worldwide acclaim. St. Lucia Distillers continues to hold back select Chairman’s Reserve for extra aging to offer a limited release of “The Forgotten Casks."

Bounty premium white rum is clean and silky smooth, which makes for an ideal mixing rum. The rum has been aged 2 years to offer some soft wood complexities and rounded balance before it is filtered to remove the color.

Chairman’s Reserve was first blended in 1999 and was overseen by the then Chairman, Laurie Barnard who conceived a quality rum which was blended using continuous and pot still rums coming on stream after ageing. Local demand has been phenomenal and the brand has expanded internationally, where the versatility of the rum makes for great cocktails. Chairman’s Reserve recently won Gold - Best in Class at the International Wine & Spirits Competition and Double Gold at the San Francisco World Spirits Competition.

Admiral Rodney Princessa contains Coffey still rum pulled off lower sections of the still resulting in a robust and complex flavor profile. This rum is aged from 5-9 years in Bourbon and Port casks before being blended together by our Master Blender.

The pot still rums of this lush, tropical island nation located just south of Martinique, are widely regarded as some of the best examples of their kind in the world. The slow fermented molasses came off the Vendome Pot Still at 82% ABV and aged for five years in used bourbon barrels before being shipped to New York. The flavors are explosive and the intensity is pleasantly persistent even as the notes evolve over time. Notes include Anjou pears, cinnamon stick, papaya, honey and spicy oak.

Admiral Rodney Formidable contains rums pulled exclusively from the lowest portion of the Coffey still possible resulting in a much heavier and more flavorful rum. These rums are then aged from 9-12 years in previously used Bourbon casks and expertly blended.
