Blended by a former Maestro Ronero for Havana Club, Zafra 21 is a straight 21-year-old (not a solera blend) aged entirely in ex-bourbon casks. Smooth, sweet, assertive yet not dominating, the fruit and spice elements unfold to reveal mild traces of currants, pears and apricots, with a gentle touch of vanilla and nutmeg. This family run producer uses old Jack Daniels barrels to age this rum on average for 5 years. Very smooth and mouthfilling and a terrific value for an aged rum.

Coconut-flavored rum is one of those spirits that has either too much coconut or too much of a syrupy taste. It is a flavor that is difficult to find with a nice balance. Rum Jumbie's Coconut Splash comes close to making the grade of a very good coconut rum. It is certainly not overtly sweet like many, but has a soft sweetness. The coconut is also not overbearing, in fact some reviews I've seen complain that there is not enough coconut. For me it's nicely "splashed" with coconut, which is the point of this flavor line; add a splash of flavor to a rum. In that context they did a great job, though the aroma of the coconut will make you think you are going to get more coconut than you do in the end.

Varela-Hermanos distills their rum from estate-grown sugar cane, which is aged in oak casks. Ron Abuelo Centuria rum is named in honor of the distillery''s 100th anniversary and is a blend of rums aged "up to" 30 years. It is a solera style rum, which typically means that a portion of the oldest barrel is maintained after bottling to marry with the next oldest (think of the gasoline in your car as a solera system where there are traces of the very first tank of gas still there in the present unless you ran the thing dry). It is a limited release of only 200 cases imported to the United States. The rum begins making a drastic jump towards the rich caramel taste of a fine aged rum. Fitting more in line with the 21 than the 12. Noticeably sweeter taste than the 8 or 12.

Made in Las Cabras, Panama in a copper and brass column still, aged three years in new oak and ex-bourbon barrels, blended with older rums, and finally filtered back to white before being brought down to proof and bottled in Ukiah, California. Results: Totally solid white rum. Just the right amount of punchiness keeps things high and tight, letting the clear vanilla notes shine while keeping things on a rustic and almost simplistic level, particularly on the lightly medicinal finish. The slightly higher alcohol level pushes the rum’s firewater agenda but doesn’t do much to imbue it with secondary characteristics. Give it time in glass or water to bring out cocoa powder and graham cracker notes — or simply use it as is was likely intended: as a mixer. 86 proof.
