Our Bourbon is a blend of our own aged bourbon with our curated, contract Bourbon from Indiana. All Bourbon’s in our current blend are less than 2 years old. The current mash bill on our Bourbon is 75% Corn, 21% Rye and 4% Malted Barley. Our curated Bourbon is aged using a proprietary process that accelerates the aging process, presenting a Bourbon that drinks more like a 4-6 year old Bourbon.

Rested in our freshly dumped bourbon barrels. Our Barreled Rum is a very dry and complex spirit. The barrel dries the spirit out to an almost cognac style of dryness. It is mildly bourbon-esque on the finish. Makes a fabulous sipping rum.

It’s not a complex recipe with fancy exotic ingredients you’ve never heard of; Bimini Gin is handcrafted using a few familiar key botanicals— grapefruit zest, hops, coriander seed—that taste bright and citrusy with a beautiful floral aroma that you’ll continue to savor after the glass is empty. Bimini was made to taste good on a warm sunny day. Period.

Made from Caribbean blackstrap and fancy molasses both from the British West Indies. We use the dunder-pit fermentation method and the results are a very pungent traditional Caribbean style rum. It’s butterscotch nose is a bit deceiving, but it has a pleasant dryness and buttery mouth-feel. A great mixing rum for traditional tiki cocktails.

Currently just available at their Fox Street distilleryMaine Craft Distilling has released Fifty Stone Single Malt,their first whiskey. I’ve found this 90 proof barley based whiskey, smooth and slightly sweet. I believe it compares nicely to Four Roses current small batch.

Alchemy Dry Gin is created from Maine-grown barley distilled three times in a pot still. During the second distillation, juniper, coriander, cardamom, and lemon peel are infused into the alcohol while it is still in its vapor state. Alchemy is a perky, floral-forward gin that can be best enjoyed in sour drinks or dirty martinis.

Eight Bells Rum is a barrel matured gold rum. Distilled from Carribean sourced molasses in our pot still and then aged for 1 year in bourbon whiskey barrels, Eight Bells Rum has flavors of toasted spice and vanilla with a long, smooth finish reminiscent of caramel, oak and figs. It is excellent sipped neat, or enjoyed in your favorite rum cocktail.

Ingenium is distilled from a grain mash in a direct-fired pot still in the style of 18th and 19th century gin. Pot distillation retains the flavors of the grain giving Ingenium mouthfeel reminiscent of whiskey. The botanicals are a blend of traditional and non traditional gin botanicals with a few extras that my wife and I were introduced to while traveling in Southeast Asia. The combination of which creates a nicely balanced, citrusy, herbal gin with a very smooth finish.

Crafted in small batches right here in Maine, we use only the finest natural ingredients that we can find. A blend of five carefully selected aromatics and a special Caramel infusion give Original Rum it’s distinctive color and amazingly fragrant notes.

Gunpowder Rye Whiskey draws its inspiration from our rich heritage of rye whiskey production: brewed from local grains and distilled in small batches on our traditional copper pot still. Gunpowder is a spicy Maryland style rye with toasted malt flavor and big barrel character. The finish is long with vanilla and chocolate notes.

Subtle coconut intermingles with floral juniper on the nose. Fruity juniper flavor and cooling hops resolve to citrusy grapefruit and coriander on the mid-palate, followed by dry, lingering coconut and honey-like chamomile on the finish.

KOPI Rum uses some of our finest rum as a base. We use custom roasted Indonesian Sumatra for a subtle coffee flavor that is intended not to cover up the rum, but to simply enhance it.
