Madre Mezcal is created at the Garcia Morales Ranch, nestled in the rolling hills of the Oaxacan Sierra. Produced by Jose Garcia Morales and his family, this blended mezcal is a traditional Zapotec recipe. Handmade in the hills of San Dionisio, Oaxaca, the family has been cultivating agave on their land in Oaxaca for centuries, creating high quality, small-batch artisanal mezcal. Madre Mezcal is distilled from agave Espadin and agave Cuishe using a family heirloom copper pot still. These agaves are roasted in an earthen pit, before being fermented with local well-water and wild mountain yeast. Madre has a hint of sweet smoke accentuated by earthy herbal notes of sage, and minerals on the palate, followed by a lingering floral finish. Agave Cuishe (or Cuixe) is a wild agave in the Karwinskii family that includes Madre-cuishe and Barril. It grows in a cylindrical, stalk-shaped piña, with leaves spreading at the top. It’s often slightly smaller than Madre-cuishe, and yields intensely flavored mezcal with high minerality and spice notes.

GEM&BOLT is a small batch joven mezcal made with perfectly ripened, late harvest, 100% espadin agave from the central valleys of Oaxaca, Mexico. GEM&BOLT is deeply informed by hundreds of years of tradition, using no artificial yeasts, additives or chemicals. The pĨna is slowly wood-roasted in conic earthen pits and mashed with traditional tahona stone. It then goes through a natural fermentation in oak vats. Created from Espadin agave, El Buho Mezcal is handcrafted at a traditional artisan distillery in the heart of Oaxaca. Mature agave plants are carefully selected, then slowly roasted for one week in an underground stone pit with local mesquite wood. The roasted agave pieces are crushed on a traditional Tohona stone mill, well water is added to the resulting aguamiel, and the mixture fermented for a few days. The mash is then double distilled in a fifth generation alembic still and packaged in a distinctive bottle featuring "el buho" himself. El Buho Mezcal is now available in the US thanks to Brooklyn-based company, Henry Steele Imports. The famous estate in Guanajuato is producing some of the most interesting and affordable Mezcal on the market. Most people think of Mezcal as the traditional smoky Oaxacan spirit made from the Espadin varietal of agave, but nearly every state in Mexico distills some type of Agave spirit. In the state of Guanajuato, the agave of note is the Salmiana and it's cultivated for their own style of smokeless mezcal. The Jaral De Berrio family was originally given the noble title of Marquis in 1774 by King Carlos III and subsequently, they were given one of the first official warrants to produce wine & spirits in Mexico. Perhaps Guanajuato's most prominent family, the Hacienda is still a popular tourist attraction in this part of Mexico, but the real attraction is their fabulous Mezcal. The Salmiana agave and it's lazy drooping leaves is a familiar site for many in Southern California, but few know of it's amazing capabilities for creating delicious Mezcal. The agave is roasted in traditional clay ovens and distilled twice in copper pots. This is the perfect middle road between the spice earthiness of Oaxacan mezcal and the cleaner fruitier flavors common in Tequila to the west.

Fernando Santibañez had a passion for mezcal and its limitless possibilities. Using his years of experience and his love for mezcal, Fernando respectfully combined the traditions of mezcal with those of barrel aging to create a unique expression in Xicaru Añejo. Xicaru Añejo is made with traditional methods from 100% Maguey espadin. It rests for a minimum of one year in medium-toasted, used American oak barrels and is finished to 86 proof. Used barrels are employed to prevent over-aging, and the higher proof helps to maintain the essential characteristics of mezcal.

Mezcal Carreño is ensuring the future by planting over 30,000 agaves since 2017 and additional plots every year. They support multiple non-profits both in Oaxaca and Arizona. In Oaxaca Gók-nenna, meaning "Help me" in zapoteco, has a focus on helping the Zapotec Indigenous women. In Arizona the Urban Agave Initiative helps plant agaves in the Phoenix and Tucson communities to support the endangered mexican long-nosed and shorter-nosed bats. Wash – The crushed agave is mixed with water three times. The Agave fiber is kept and used in distillation to extract maximum flavor. Ferment – After the wash, the mash is placed in fermentation vats. The vats are made from pine and do not have a cover. With the help of the indigenous, airborne yeast, the magic of fermentation proceeds. This usually takes six days to complete but will vary depending on the air temperature. Distill – The fermented juice is pumped into our alembic (pot still) and twice distilled. It is then evaporated and collected. With each pass through the still, we separate the heart (corazon) of the distillate from the head (cabeza) and tail (cola), which are not used for mezcal. At this point we have mezcal that is at batch strength. Water is then added to bring down the final alcohol level to 44%, or 88 proof. We now have Fidencio Clasico Joven, ready for bottling. Made by the same palanquero as Los Nahuales (as it is known here in the U.S. – it goes by Los Danzantes in Mexico), Don Joel Antonio Cruz y familia, the San Juan del Rio Alipús is made from 100% Espadín. Per the tasting notes from Craft Distillers it was fermented in oak vats and is the fruit of non-irrigated Espadín “grown in sunny mountain-top plantings in ferriferous soil at 4,600 feet.” They describe it as “Fruity, rich, smokey, pleasantly sweet.” In our tasting we found a full agave nose with a slight sweetness and light smoke notes. It was smooth on the tongue and displayed an even alcohol note. The palate reveals even more smoke which is the dominant impression left after a swallow. This is definitely the smokiest Alipús which should appeal to scotch drinkers who appreciate some peat.

Fernando Santibañez saw the opportunity to create a mezcal with a nuanced and balanced profile while retaining the distinct identity of traditional mezcal. Xicaru Reposado is aged naturally and gently in small batches, reflecting Fernando’s great respect for both the maguey and tradition. As with Xicaru Silver, Xicaru Reposado is made with 100% Maguey espadin cooked in a conical stone oven with mesquite and ocote woods. After tahona-mashing, natural fermenting and double-distilling, the mezcal is ready for aging. For two to four months, Xicaru Reposado is allowed to rest in medium-toasted American oak barrels.

Hacienda de Bañuelos Zacatecas is produced using Blue Weber agave in the state of Zacatecas. Zacatecas is just north of Jalisco with a long history of agave distillation. This mezcal has some similar characteristics to tequila due to its use of Blue Weber agave and steam cooking but the wild fermentation and distinct minerality trait of Zacatecas sets it apart. The agaves are cooked for 24 hours in a stainless steel autoclave and crushed with a roller mill. Mezcal Lajita is a classic smoky and earthy Mezcal produced by the renowned Licores Veracruz in Oaxaca, Mexico. Triple distilled and aged in oak casks for over five months, which produces a ‘rested’ taste and quality. Every bottle contains a single agave worm, which is a traditional guarantee of Mezcal quality. This 100% agave Mezcal was awarded the coveted title ‘Best Mezcal in the USA Market’ in 1997, which is a result of the founder Don Jose Villanueva, who spent his life developing the smoothest tasting spirits possible. The technique for making Mezcal remains true to the traditions used by the Spanish Conquistadors in the XVI th century, and remarkably little has changed. It consists of five steps : the culture of the plant, cooking in a lined covered hole in the ground or clay oven, pounding, fermenting, and distilling. Most domestic Mezcal (unlike Tequila) is distilled twice and for export markets where a higher quality is required, Mezcal Lajita is distilled three times to eliminate any impurities, especially methanol and excesses of copper which are commonly found in some Mezcal. The mezcal is then left to mature for a minimum of 3 months to over a year.
