We wanted to make sure our first anniversary beer was a special one, so we cranked up some Beatles tunes and got to work brewing. The result was a barrel-fermented wild farmhouse ale aged on whole raspberries. Raspberry Fields spent five months slumbering in French oak barrels with a wild Saccharomyces yeast strain, which gave the beer balanced flavors of lemon, hay, and a touch of tartness. The beer’s rest on raspberries gave it a prominent fruity profile, while its time in oak barrels smoothed out the finish with a touch of vanilla.
