Dawn of the Dunkel is a collaboration with Weyermann malt, brewed exclusively with Weyermann malted barley. This is a reconstruction of the first Bavarian dark lager, adapted from a recipe circa 1550. Technology at the time dictated floor-malting and inhomogeneous direct-fired kilning, which we’re duplicating by using a combination of malts ranging from pale to roasted, and a good portion of smoked malt. Dawn of the Dunkel has lots of chocolate roasted notes, underlying smoke, and a sweet dry finish.
