TASTING NOTES: Honeysuckle, green tea, tangerine, lychee, pineapple
ON PRODUCTION: 100% destemmed like a red. Soaked in juice for 12 hours of skin contact to extract flavor. A natural pink comes from the skins.
ON FERMENTATION: Fermented in tank and temperature controlled for 4 weeks at 50°F. Rack from heavy lees and aged 6 months in stainless steel.
ON RIBOLI VINEYARD: Riboli estate is situated in Santa Lucia Highlands in Monterey County. Weather is generously warm but never too hot, allowing the Gewürztraminer to come slowly to maturity. Cold nights and foggy mornings help give the grapes good acidity.
