In 1806, the Senkin brewery was established. Their brand is based off the Japanese crane and their name is derived from the words “wizard” and “bird”. The water used in brewing is from the same source that is used to grow rice. They call it a “domaine” like the french term for wine producer who own their own vineyard. A very stylish sake that pairs well with Japanese and French cuisine.
Keeping the unique Kame no O sake rice trait alive, it has a balanced flavor with accents of lychee and cranberry backed by firm mineral. This pairs especially well with Japanese cuisine.
