With its dense texture and intense ripe flavors, this 100% Estate Cabernet Sauvignon is an impressively powerful wine that delights from start to finish. Wholly ripe flavors of dark blueberry are concentrated with layers of tannins that are well integrated now but will improve with cellaring time. Characteristics of tart cherry, red currant and ground black pepper combine to create a nuanced palate in this wonderful wine. Chocolaty oak shows first on the palate, with blackberry and spiced plum accenting the finish. You can enjoy this wine upon release but don’t be misled, this wine will age for 10 or more years to come! - Paul Frankel, Winemaker Production notes The harvested Cabernet Sauvignon grapes were picked at night and delivered to the winery at sunrise. Harvesting at night ensures that the fruit is cold, fresh, and the best quality for high end winemaking. The grapes were processed with extreme care and minimal intervention. Each of the four lots were destemmed and fermented on the skins for 2-3 weeks, depending on initial sugar levels and yeast selected. We pressed the skins using our micro basket press, just half a ton at a time. We aged the wine in a combination of new and used barrels. World Cooperage’s ‘SOLEI’ barrels were used for their aggressive oak impact, imparting molasses, vanilla and caramel tastes into the wine. The wine aged for 18 months in barrel before being bottled in May 2019.
