Sourced from the beautiful and diverse Sonoma County, this Sauvignon Blanc white wine is harvested in the first weeks of September. After arriving to the winery, the grapes are loaded into the press and either immediately pressed or allowed to sit on the skins for a determined amount of time. After soaking, grapes are pressed, and juice is sent to stainless steel tank to settle for two days. The clarified juice undergoes fermentation in stainless steel tank or neutral oak to ferment. After fermentation, the resulting wine is aged for a several months until they are ready for bottling.
This white wine has aromas of fresh pineapple, white lily, jasmine, and passion fruit. It has flavors of honeydew melon, peach, and citrus blossom. It is light on the palate but flavor dense.
