“Mas La Chevalière” is literally the “farmhouse of the knight’s lady,” the name of the Laroche property in southern France. Their rosé is supple, smooth and broad, offering flavors of cherry, blueberry, and redberry fruits. It's nice and lively in the mouth with a nervy backbone of acidity, but the finish is as smooth as oyster pearls—which is fitting because it also pairs incredibly well with oysters.
