The sparkling wines of Limoux probably pre-date those of Champagne. This example, made from 90% mauzac and 10% chardonnay, is very attractive and very good value, and makes an excellent aperitif as well as a successful partner for food. The flavours are fresh but substantial, with good focus and structure, and they sit prettily with the broad seam of crisp, round-edged acidity. The bubbles are plentiful, the mousse generous.
