After several wine experiences in France and abroad (Spain, Australia and New Zealand), Benoit Daridan took over the 15-hectare family vineyard in 2001. He is the 7th generation. His wines reflect his passion for his terroir, and he works tirelessly to preserve its local tradition. The vineyard is located in the heart of the Loire valley in Cour Cheverny, and it lies between the 2 famous properties of “Chateau de Cheverny” and “Château de Chambord”. The most notable characteristic of the vineyard is a 2-hectare section of 50-year-old vines. The unique grape variety for the small appellation of Cour Cheverny is the Romorantin (established by King Francois). 80% Sauvignon Blanc 20% Chardonnay The grapes are crushed in our pneumatic press, the juice is then settled and stored in stainless steel tank. The alcoholic fermentation is on between 5 and 30 days with a regulated temperature between 14 and 18°C. Malolactic fermentation is naturally done, entirely or partially, according to the vintage. Clear and shiny robe, with green reflects .Exotics fruits on the nose and pineapple notes on the palate with a fairly long finish. Drink within 2 years. On its own, with river fishes with white butter sauce, shellfish, chicken curry, salmon lasagna, tomatoes tart, fresh goat cheese green asparagus.
