A delicate copper hue in color, this wine is intense, sensual and heady. Delightfully composed of light bubbles that form a stream resembling fine pearls. NOSE: Audacity and intensity define this expressive Champagne with complex aromas of red fruits and flowers. On the palate, pristine grapes of the 2008 Palmes d’Or Rosé offer subtle, fresh aromas and exquisite fruit character, which has blossomed over time with the ageing process. Currently in its youth, the wine delivers notes of lemon, dried flowers, pastry and a touch of kirsch. A distinguished length, offering notes of peony and great aromatic depth on the finish. Best served chilled, at 44-46ºF as an aperitif and 50-54ºF with food.
FOOD PAIRING: Spices and subtly-flavored dishes would marry well, such as chicken or fish in sauce, seafood and its minerally charm, especially uni (sea urchin), red berry fruit desserts (not too sweet) .
