This Dry Rosé, made from Old Vine Grenache vines planted in the 1940's, displays both the elegance and the intensity the varietal is capable of. The light salmon hue invokes the pink wines made in the South of France, intertwined with a new world vibrancy that bursts from the glass.
The fruit was hand-harvested in the dark and cool mornings that the west coast in known for, then brought to the winery where it was gently de-stemmed and lightly crushed. Maceration time was 3 to 7 hours, depending on the lot and color extraction rate, before being brought to the press. The juice was then fermented in Stainless Steel tanks at a very cool temperature, extending the primary fermentation over 4 weeks. Once dry, the wine was moved to various stainless tanks for extended aging while the Malolactic fermentation was inhibited. Bottled after 8 months aging in non-oxidative style.
