Like our Chardonnay, the Pinot Noir is also a Burgundian grape, delivering the finesse and flavor of its distinguished origins. We focused this style with careful grape selection, followed by stainless steel fermentation, which allowed us to retain the bright, exuberant fruit focus of the varietal. This was followed by a secondary, malolactic fermentation, which softened and rounded out the palate. To add structure and gentle spices, we aged the wine for eight months with French oak.
