One of our best single vineyard lots, this Cabernet Sauvignon comes from Jet and Gay Wilmeth of Tokio, TX. The fruit was first treated to a 10 day cold soak. We encouraged an initial wild fermentation, completing with a cultivated yeast. We feel two yeasts provide a rich and complex palate.
This wine spent 20 months aging in our oak barrels. We used both American and French Oak during the aging process. Almost 30% of the wine was aged in New French Oak
