Astoria Spago Prosecco is light straw yellow in color with very fine bubbles. Aromas of fresh pear and pineapple lead into bright citrus flavors balanced by a hint of creaminess and a touch of sparkle.
Grapes are harvested by hand in small lots at the beginning of September. The grapes are pressed and the must undergoes static decantation to clarify the wine. The wine remains in contact with the skins for a couple of weeks before being cleared and run into tanks. Secondary fermentation takes
place for approximately 25-30 days allowing the wine to become slightly sparkling. Final aging occurs in the bottle for a couple of months and then it is finished with the traditional Spago “string” closure.
