This Junmai Nigori sake is named after Hanako, or “Flower Maiden”, the most famous Japanese koi fish that lived for 226 years in the snowy, icy waters at the foot of Japan’s Mt. Ontake. Bright and fresh with a lovely ricey and fruity combination. Flavors of honeydew melon, raw pumpkin, and radish. Creamy texture and full body.

This Single Vineyard wine comes from a newly discovered terroir - an untouched plateau rich with limestone that imparts a unique minerality to the usually fruity varietal. On the nose, marked floral profile characteristics of this property, as well as the typical notes of the varietal: plums and fresh red fruit with floral notes and a subtle touch of spices from the local flora. Limestone outcroppings in the vineyard create a mineral texture and fresh mouthfeel with polished tannins. It is a complex and balanced wine with a long finish.

The wines of Ramón Saavedra defy expectations. As they are from the arid and hot south of Spain, one might expect them to be high alcohol and extracted; instead, they are bright, structured, and fresh. The vineyards are on the northern side of the Sierra Nevada Mountains, in Cortes y Graena, at elevations of 800-1000 meters, and they are largely on sheltered, north-facing slopes. These factors combine to produce an intense diurnal shift: temperatures are aggressively hot during the day but cool at night, which moderates ripening and allows for more balanced, fresher wines. Pi Noir is back, and it's fresher, livelier, and juicier than last year! Vibrant body, with herbs and bright red fruit on the palate, with some spice, and weighing in at a pleasant 11.5%. The grapes see 3-5 days of gentle maceration and the wine is aged in stainless steel. High altitude vineyards provide ample acidity to frame the material and keep the alcohol low. This is a singular expression of Pinot Noir.

Careful and delicate agronomic management and continuous research have given rise to noSO the authentic expression of the Glera grape variety particularly suited to those who are sensitive to sulfites yet love excellence. The name points to the absence of added sulfites, the formula of which is SO2. In particular, the noSO method requires delicate pressing, does not use sulfi tes or other allergens and is fermented with low sulfite producing yeasts during the first and second fermentation cycles. The wine is left on the yeasts for many months both for the base wine and for the sparkling wine. This ensures notable longevity in the bottle which allows the typical notes of great white wines for aging to emerge.
