Shiraz and cabernet sauvignon have been blended in Australia since the late 19th century, in a style that uniquely combines the plush and savoury notes of the shiraz with the elegance, length and structure of the cabernet. With this wine, Cape Mentelle reconnects with Australian wine traditions and blends these two outstanding varieties from the Margaret River region, creating a rich, deeply textured and complex wine. The aromatics are complex and enticing; dark forest berry fruit, black cherry, black currant with orange marmalade and intense smoked charcuterie. Finer nuances of flint and jasmin blossom entwine with leather and tobacco undertones combining with licorice and cardamom notes

Both the Sauvignon Blanc and Semillon fruit for this wine were harvested on a cool March evening to retain aromatics of the fruit. The Sauvignon Blanc and Semillon were processed individually with some skin contact in the grape press. Following settling the wines were racked and inoculated for ferment in stainless steel vessels. A combination of yeasts were used to enhance the varietal characters and to produce fresh, fruity, clean wines. Fermented at cooler temperatures for the preservation of fruit aromas and flavours. After a few weeks on yeast lees, the wines were racked and the individual components assessed and blended. The final blend was given a light fining before being filtered and prepared for bottling.

The Indigenous Series 2015 Semillon is a new style of full bodied table wine that will be completely unfamiliar to those who think they know ‘Semillon’. It owes its character to the Three Hills Vineyard in the extreme south of Margaret River which produces fruit that is golden and flavoursome at harvest, very different to that in vineyards designed for mechanisation. The result is a full bodied flavoursome food wine, generous in its alcohol content, gutsy in its mid palate weight, food friendly, intriguing in its composition and long lived. This is a red drinker's white wine.

A light pink wine with salmon tones and aromas of cherries, plum blossom and subtle brioche and dried herb hints. The palate has a crunchy entry of natural acidity, red berries and candied apples. The wine is dry and succulent, with textural tones of eastern spice, strawberries and rose water leading to a quenching mineral finish.
