Pelago joined the list of the most sought‐after Italian wines in the world in 1997, its first year of production, when it won the Best Red Wine trophy at the International Wine Challenge in London. Pelago is the result of the insight of our technical group, who had the idea of mating Montepulciano with Cabernet Sauvignon. It is a wine which retains the style and personality of the indigenous grapes while broadening its aromatic profile and complexity by adding qualities of the Bordeaux style of wine. To maintain a high standard of quality, we chose to produce it only in those years which provided grapes suitable for a fine wine. The name "Pelago" derives from pelagos, meaning "sea" in ancient Greek, and suggests the wine's marine character and the special qualities of taste and aroma which are typical of wines produced near the coast.

Casal di Serra was one of the first truly "selected" Verdicchio made in this variety’s production area. It was created in the 1980s by selecting the best grapes grown in the Montecarotto vineyard, and later enriched with grapes from another three plots situated in the most suitable areas for cultivating Verdicchio dei Castelli di Jesi. All the values of a great indigenous variety find expression in this wine. Contact with its own natural yeasts during fermentation and in the aging process gives Casal di Serra particular properties of richness and personality, without altering its fine balance and special elegance.

Castelli di Jesi, Marches, Italy- This medium-bodied white is crisp and dry with a light elegant aroma and flavor. Hints of grapefruit and peaches lead toward a fine finish. The historic amphora bottle is a characteristic feature of this Verdicchio. Serve with fish or cold dishes (Crisp, Citrus, Floral, Medium-bodied)

A full-bodied palate, that is tannic to the right extend and altogether harmonic.

La Staffa's Verdicchio di Castelli di Jesi is grown organically (moving towards certification) in limestone-rich clay soil at about 400 meters (1,300 feet) above sea level, close to the altitude at Colle Stefano, which is about an hour away (and much closer as the crow flies); high altitude vineyards preserve acidity during the growing season, and La Staffa has almost the same lip-smacking fresh green-apple zing as Colle Stefano. The grapes are picked into small boxes, pressed immediately, and fermented (using both indigenous yeasts and cultured yeasts) at cool temperature in a mixture of stainless steel and cement tanks with temperature control for about 15 days; the wine is bottled in the spring following the vintage after aging on the fine lees for about six months. The wine in tank is left outside during the winter for a mild natural cold stabilization, and is roughly filtered (not sterile filtered). Tasting notes: Pale straw; distinctly aromatic (almond, citrus, green apple, herbal notes on both nose and palate); medium weight, fresh acidity; long finish. Makes a delicious dry aperitif, or drink it with most any seafood dish, seafood pastas, or roast chicken.

Vinification and refining: Fermentation and maceration goes on for 8 to 10 days in temperature - controlled tanks, using native yeasts. A brief refining in steel tanks follows. Tasting notes: Deep red colour with purple hues. This wine is fresh to the nose, revealing fruity and flowery perfumes. The palate offers immediate freshness and acidity Serving temperature: 16-17°C.

Easy and pleasant, cherry berry fruit and light tannins

Straw yellow color with light green reflections. Aromas of acacia, broom and wildflowers, chamomile with typical hints of almond. Dry, savory, mineral, with hints of green apple and pleasant almond finish. Serving temperature 14°C approx, as aperitif, pasta and rice dishes, fish, white meat.

The carachteristics of this wine are its typical deep ruby colour, vinous bouquet and dry harmonic taste. It is produced from only the best Sangiovese and Montepulciano grapes, and mellowed in oak barrels. It is a wine which is at its best served at room temperature to accompany all kinds of roast meat and game.

La Staffa’s final wine made with the Verdicchio grape, this time with a small addition of Trebbiano grapes, is the ‘Mai Sentito’, or ‘Never before tasted/heard of’. A spumante wine, fermented with its own yeast in the ancient way, it is distinguished by a great fruity crispness, underpinned by the characteristic flavour of the winery’s wines. A fresh and convivial wine, it expresses the striking features of the zone.

Perhaps the greatest wines in the Chianti area are the Brunello wines, which are also made from Sangiovese. These wines are much bolder, richer, and more similar to the best of California Cabs.
