Domaine-de-Montbourgeau-L’Etoile
Truly unique, this cider-/sherry-like white is nutty with oxidized apple and apple skin notes. The classic white wine of Montbourgeau, it is usually bottled after 24 to 30 months of elevage in barrel. Chardonnay is the dominant grape but an occasional Savagnin vine is found within the Chardonnay plantings, an addition which adds a touch of complexity to the ultimate blend. The fermentation occurs in stainless steel but, after malolactic fermentation, the wine is racked into small barrel and demi-muids for two years. At that point, the entire production is assembled and left for several months in cuve before being bottled.

Red wine. Arbois Pupillin, Jura, France. Sustainable. 100% Ploussard. The bouquet is delicate with wild aromas of redcurrant, strawberries and a hint of smokiness. Light on the palate, with great acidity and fine tannins. Flavors of raspberry, bitter cherry, and redcurrant with touch of gaminess on the back end. A really great Ploussard that is precise but at the same time rustic. With cured meats, particularly air dried ones like bresaola, this wine will sing; it will also stand up nicely to steak tartar or beef carpaccio.

Monmousseau, one of the most important sparkling wine producers in the Loire Valley of France, this is a blend of 70% Chenin Blanc and 30% Chardonnay given 18 months on lees in the traditional method. Refined in mousse and effervescence, this excellent dry sparkling has almond, citrus and pear flavours, a subtle richness and a soft refreshing finish. The ‘Brut Etoile’ is indeed a ‘star’ sparkling wine that everyone will enjoy, especially as an aperitif.
