This wine was made from 100% Chardonnay grapes harvested from our vineyards located in the Lower Galilee. The wine went through a slow controlled fermentation in stainless steel tanks, without the influence of barrel or malo-lactic fermentation in order to allow the natural grape characteristics and the terroir to shine through. Light and fruity, this classic Chardonnay is full of flavors and aromas; melon, peach, pear with hints of tropical fruit. The wine has a pale straw color and moderate acidity leading to a pleasant enduring finish.

94% Cabernet Sauvignon, 6% Merlot Grapes are harvested by hand from late September through mid-October. Immediately following the crush, the must is chilled to 60ºF en route to the fermentation vats. A modern classic in style, this full-bodied Reserve Cabernet Sauvignon exudes a complex bouquet of ripe black fruits suffused with nuances of truffles and toasted walnuts. Approachable and delicious now, this full-bodied red will age gracefully over the next decade. Savor with rich stews, red meats and hearty pasta dishes. Hand harvested at optimal ripeness, grapes are immediately crushed and chilled. A brief period of skin contact is allowed before pressing. Pale straw. The rich Terra Rossa soil of the Kedesh Valley is well drained and abundant in vital minerals contributing to this wine’s earthy and robust full body. The wine is a deep dark ruby red with cherry hues and a rich round body. Core flavors of black forest fruit, cassis and blueberries with chocolate, vanilla and coffee are pronounced. Notes of aged wood combined with balanced acidity lead to a long complex finish. This wine was aged for 12 months in French oak barrels and once bottled, an additional year in the winery cellars giving it refinement and complexity.

Following the record breaking cold and hot temperatures of harvests 2011 and 2010 respectively, we thankfully returned to a more typical vintage in 2012. The relatively cold and wet winter resulted in late but strong budbreak. A somewhat warm April advanced the season, resulting in a normal start of harvest in the first week of August. Trailing a beautiful summer that was just slightly warmer than average, a short warm spell in October allowed us to complete the relatively short harvest on the 21st of the month. The 2012 vintage brought lower than average yields coupled with very good quality. The 2012 Yarden Rosé is a blend of 71% Chardonnay and 29% Pinot Noir fruit harvested from high-elevation vineyards on the northern Golan Heights. This sparkling wine was produced using traditional methods only, including hand harvesting, whole cluster pressing, and secondary fermentation in the bottle. The wine aged for five years on the tirage yeast.
