Intensive Red color with violets hints. On the nose it is extremely fresh. Black and red fruits such as blackberries and wild berries; very earthy coming from the Bierzo soils such as roasted notes smoke and liquorice, some hints of balsamic aromas, mint mainly, are also present. The wine is firmly structured on the palate, with incredible depth and a persistent fruit-driven finish. Perfect balance with very fine tannins. A fresh and clean wine, it is delicious on a hot day slightly chilled with grilled meats and grilled vegetables. It is also wonderful as an aperitif enjoyed with smoked meats and cheeses, Cured beef Carpaccio, lamb with pea, mint and feta dressing, chicken shawarma or haloumi cheese gyro.

The concept of this wine is to apply both Graillot and Pérez techniques to the terroir of Bierzo. Antoine’s contribution was fermentation in cement vat, a practice that fell out of favor in Bierzo a generation ago but is still used by the Graillot family in Crozes-Hermitage. The vat he purchased for this project actually wouldn’t fit through the door of Raúl’s winery, so they had to remove a section of the roof in order to lower it in by crane. In addition to providing local knowledge and access for the grape purchases, Raúl also encouraged Antoine to leave the wine on the skins for an extended period of time after the whole cluster fermentation was complete. When I arrived to the winery on November 8th of last year, Antoine was there transferring the wine from cement to a large foudre for another ten months of aging. The grapes come from three different sites in the northwest quadrant of Bierzo, one of which is the Rapolao vineyard in Valtuille de Abajo, a site that is rapidly gaining recognition as one of the finest in the appellation. The brand name “Encinas” refers to the Quercus Ilex, more commonly known as Holm Oaks.

An historic winery founded in 1879, making wines with old vines 50+ years old, from organically grown dry-farmed vineyards. In addition Guerra controls 1/3 of all the vineyard land in Bierzo (1,000ha - 2,471 acres) and only makes wine with the best 10% of the grapes harvested. Pale pink. Lively red berry and orange zest scents are complemented by fresh floral and white pepper flourishes. Juicy and precise, offering bitter red currant and tangerine flavors that deepen and become sweeter on the back half. Taut and nervy on the finish, which hangs on with good spicy persistence.
