Before and during the gentle pressing of the grapes, nitrogen is introduced which eliminates all contact with oxygen during the whole process. This creates greater aromatic intensity. The 2010 Zolo Reserve Cabernet Sauvignon is a worthy follow-up to the 2009. It has a sedate, well-defined bouquet of kirsch, cranberry, raspberry and that gravel note. The palate is full-bodied and well-balanced with earthy ripe black fruit. It is a little broody, but draws you in, and the finish is powerful but wonderfully focused. This is a classy Cabernet. Open, ripe, clean aromas of berry and cassis set up a loaded palate with tons of cherry, plum and blackberry flavor. Oaky, subtle notes of butter, dry spices and sauted mushroom control the finish.
The Zolo Reserva Cabernet Sauvignon is characterized as powerful and complex wine with aromas of cassis, plums, and red fruit and hints of vanilla and caramel.
Plum and cola aromas set up a spunky, rubbery Merlot that features a mix of roasted berry and chocolaty oak flavors. It is mild on the finish.
Deeply colored and robust red, with a core of lusciously spiced dark plum, blackberry and dark currant flavors. Medium-grained tannins and firm acidity lend this a muscular structure.
