Gilgal Brut is made from a blend of 50% Chardonnay and 50% Pinot Noir grown in the cool climate of the Golan Heights. Produced in the classic Champagne method, it is aged for a minimum of one year in the bottle on the tirage yeast. This non-vintage sparkling wine shows off bright lemon notes nuanced with characters of crisp green apples and pears, fresh flowers, and hints of wild strawberries. Yarden Sauvignon Blanc was produced from Sauvignon Blanc grapes with a small portion of Semillon, both grown entirely in the Golan Heights where the cool climate, rocky volcanic soil, and high altitude are ideal conditions for growing classic wine grape varieties. Aging in French oak barrels for 2 months adds a light toastiness to the already complex fruit and herbaceous characters typical of the Sauvignon Blanc varietal.

The wine should remain in excellent drinking condition for five to seven years from harvest.
