An intense color of mahogany with deep aromas of dried fruits (figs and raisins) and suble notes of chocolate and coffee. The palate is very smooth and velvety with prune notes and a very long finish.
Very dry, crisp and fresh with a slightly salty finish.
Straw-yellow coloured. The aromas are delicate and complex, with notes of almonds and autolysis. On the palate it is savoury, with flavours of green apple, sea salt and toasty yeast. The barrel fermentation adds extra body and structure. Long and persistent.
The wine is then aged for over 10 years which gives it a very dark, almost opaque colour and intense aromas of raisins, dried figs and dates with subtle hints of coffee and liquorice. On the palate it is smooth, unctuous and sweet, which makes it an excellent partner for chocolate desserts, vanilla ice cream and surprisingly, blue cheese.
Palo Cortado Sherry is the rarest style of the Spanish Sherry DO wines, and originally came about by accident during the wine's aging period. Because of this, Palo Cortado is often said to occur rather than be made, although modern winemaking practices have lead to greater reliability in recreating the process. It is made in limited quantities and only accounts for a fraction of annual Sherry production.
