Very light straw with a slight green hue. NOSE Forthcoming grassy and tropical fruit flavours. PALATE This dry unwooded wine has a crisp acidity with a well rounded fruity mid-palate. WINE MAKING After destalking and crushing of the grapes the juice was mevushal and fermented in stainless steel tanks. The wine was left on the lees for two months, racked and filtered prior to bottling.
The Unorthodox Chenin Blanc is light straw in color with aromas of tropical pineapple, passion fruit and melon flavors on the nose that follow through on the palate. This crisp wine is well balanced and displays nice acidity, and will complement fish and chicken dishes.
The Merlot and the Cabernet Sauvignon were made separately and blended just prior to bottling. Both varieties went through the mevushal process prior to fermentation in stainless steel tanks. French oak was used for 7 months in the Cabernet Sauvignon and a combination of French and American oak for 7 months in the Merlot. The blend is 62% Merlot and 38% Cabernet sauvignon
