Paratus. It is the Latin word for prepared. We hand-selected and carefully prepared an extraordinary lot from the 2010 Paratus harvest to create this singular wine. Every aspect of the winemaking process was designed to deliver excellence, from vineyard to bottle. One section of the Paratus Vineyards stood out as bearing something exceptional that year and we took advantage by fermenting and barrel-aging those grapes separately. One barrel was set aside as our first Paratus Reserve. The wait has been worth it. The pure essence of Paratus Vineyards runs through this wine – deep, dark-fruited flavors, big tannins in perfect balance with oak and fruit, minerality reflective of the terroir of this mountainside site, dry-farmed to extract the most from its environment. You can taste the vineyard in this wine. And because we waited until the last possible moment to harvest these grapes, the result is a ripeness and flavor that coats the tongue and sings in perfect unison with the tastebuds. What is missing from the 2010 Paratus Reserve…absolutely nothing. Aged two years in new Taransaud oak barrel, two years in bottle.
